  1. Marinade the chicken the night before or 3-4 hours before cooking with salt, black pepper, and garlic.
  2. To cook, heat the olive oil in a large pan and add the onion and bay leaf. Cook until softened on a medium heat.
  3. Add the chicken, white wine, tomato paste, carrot and chilli powder.
  4. Simmer for 25-30 minutes stirring every so often.
  5. Check seasoning, add more water if the sauce is starting to dry.
  6. Add the parsley or coriander just before you turn the heat off.
