The ingredients needed to make Rice pearl pudding:
  1. Take 1 liter Tonned milk
  2. Prepare 1.5 cup Rice flour
  3. Take 1/2 cup Condensed milk
  4. Get 1 tsp Ghee
  5. Take 4 tbsp Sugar or to taste
  6. Make ready 2 pinches Yellow food colour
  7. Prepare 1/4 tsp Green cardamom powder
  8. Take 1/2 tsp Fennel seeds
  9. Prepare 1 handful Dry fruits according to your choice
  10. Take 1.5 cup Water
Instructions to make Rice pearl pudding:
  1. Heat water in a heavy bottom kadhai on high flame. Add ghee, fennel seeds, 2 tbsp sugar, yellow food colour and mix well till it dissolves in water.
  2. Once water reaches boiling point reduce heat low flame. Add rice flour quickly and stir continuously then cook it for 5 minutes.
  3. Switch off the gas stove and cover it with lid. Leave it for 5 minutes then knead dough for five minutes and make soft dough.
  4. Now make tiny balls from dough. This is the most time taking part of the recipe so have patience.
  5. Side by side heat milk in a deep heavy bottom pan. Once it starts boiling reduce heat on low flame and boil for 15 minutes.
  6. Now add rice balls, milkmaid and cook it for 20 minutes on low flame. Stir several times while cooking to prevent from burning.
  7. Put dry fruits, green cardamom powder and sugar as per your preference in milk mixture. Cook for another 5 minutes and stir continuously. Switch off the gas stove.
  8. Serve this unique recipe while it's semi hot and just enjoy.
  9. Rice balls becomes hard when it's cool down and it doesn't tastes good.
