Add the stock and season with salt if necessary, cover it up and leave to come to a rolling boil. The couscous is a North African dish and has the same texture as Attieke (a staple in Ivory Coast). The couscous is usually steamed in a "Couscousiere" several time until it's is light and fluffy, not gummy or gritty. Bring turkey stock to a rolling boil, add in couscous and cover tightly.

  1. Dice onions and tomatoes, grind pepper and garlic
  2. Put oil on fire and pour them in and fry a little
  3. Pour hot water and add spices (thyme, curry, seasoning) add in vegetable of your choice (I used bitterleaf). And allow to boil
  4. Reduce heat, Add couscous and stir and cover for awhile. Open and stir again if it's soft then u are done. If it's still strong add little hot water.. off stove and allow to steam. Done!!
