We served it with some suya for lunch this past week and it was incredibly delicious. Preheat the oil in a pot. Throw in your diced onion, green onion, and tomato and leave it to steam for about a minute or two.

How to make Jollof Couscous - Couscous is a staple in North African cooking. It's the type of Pasta made from Semolina and sometimes a mixture of Semolina and wheat flour. If you like Jollof Rice, you are going to love this one. This couscous recipe is almost everything Jollof, the only difference is that this takes so much of a shorter time to.

Steps to make Jellof couscous:
  1. Wash and slice your tomato, onion and red bell pepper.
  2. Wash ur meat, add ur seasoning and cook till tender.
  3. Allow d meat to cool down den cut into small pieces.
  4. Grind ur Scotch bonnet and garlic.
  5. Add oil in a pot, add half of ur onion add in ur diced meat and fry a little.
  6. Add in ur Scotch bonnet and garlic stir well.
  7. Add your seasoning, salt and curry powder n stir.
  8. Add in ur diced red bell pepper n tomato and allow to fry.
  9. Add in ur meat stock(the water u used to cook ur meat). Add 1 cup of water stir n allow to boil out.
  10. In a bowl add in ur couscous add 1 tablespoon of oil and mix well(this stops d couscous from sticking together n look like tuwo.. It makes it come out nice like fried rice)
  11. Add in ur couscous and lower d flame of ur cooker.
  12. Cover for some seconds den stir and add in ur remaining onion and cover for 2 minute to simmer.
  13. After 2 minutes ur jellof couscous is ready.. Enjoy!

If you like Jollof Rice, you are going to love this one. This couscous recipe is almost everything Jollof, the only difference is that this takes so much of a shorter time to. Jollof is literally one of my favorites, but sometimes I don't have enough time for the rice.
