Next spread the salt, sugar, and black pepper over the rice and mix. Upend the bowl on a plate and you will have a beautiful mound of egg fried rice. Chop up the tops of a few green onions and sprinkle on the top. Add a slice of squeezable lime to really bring out all the flavors.

Instructions to make Egg Fried Rice:
  1. Heat oil in a pan and temper with cumin seeds. Saute for a few seconds. Now add the onion, ginger, garlic and fresh red / green chilies. Saute till light brown.
  2. Add the eggs, turmeric powder and red chilli flakes. Fry for 1-2 minutes till the eggs are well fried. Then add the rice and salt.
  3. Combine everything well and saute for 2 minutes more. When done, add the coriander leaves and serve with any side dish or simply as it is.

COOKING NOTES FOR EGG FRIED RICE Try to use day-old rice: Fried rice is usually a dish that you make to repurpose the leftover cooked rice from the day before. You want to avoid freshly cooked rice because it is still moist and steamy, which may yield fried rice with a mushy texture. Remove from skillet and set aside.
