The ingredients needed to make Potato and courgette rosti:
  1. Take 2-3 floury potatoes
  2. Prepare Half a courgette
  3. Take to taste Salt and pepper
  4. Take Herbs of your choice
  5. Get Butter
  6. Get Olive oil

Position the potatoes horizontally in the feed tube to grate. Remove from the oven when the chicken is cooked through and While the rostis are finishing off in the oven, fry the eggs to your liking, then serve with the zucchini/courgette rostis. Season the potato with black pepper, then divide into four equal portions. Heat a large frying pan over a medium heat and add two tablespoons of the clarified butter or duck fat and the sunflower oil.

  1. Wash and slice courgette in half, remove the seeds with a spoon. Peel potatoes, grate using cheese grater into a bowl. Grate courgette and mix
  2. Add salt, pepper and herbs, I used dried sage. Using your hands, squeeze as much water out of the mixture as possible. Heat oil and knob or two of butter in a pan. Using pastry ring, add the mixture or make one big one
  3. Press down firmly using a pan lid and cook on medium turning once or twice. Serve when golden brown :)
