The ingredients needed to make Paneer/Tofu Mix Veg:
  1. Take 3 carrots
  2. Get 2 bell peppers
  3. Prepare Handful green beans
  4. Get 150 gms paneer/tofu diced
  5. Make ready 1 onion quarterly sliced
  6. Prepare 1.5 tablespoon cornflour
  7. Take 2 tablespoons soy sauce
  8. Get Salt, red chilly powder
  9. Prepare Cooking oil
  10. Take 4-5 garlic cloves, 1 piece of ginger - crushed together

Combine all the ingredients, except the paneer strips and the bread crumbs in a bowl and mix well. Divide the mixture into equal portions and shape them into. Cube tofu and add to a medium mixing bowl. Season with curry powder, coconut aminos, sea salt, and nutritional yeast.

Steps to make Paneer/Tofu Mix Veg:
  1. Roughly chop the vegetables.
  2. In a bowl mix 2 tablespoon of water with 1.5 tablespoon of cornflour.
  3. In a hot pan, put some oil. Add the onions and crushed ginger garlic paste. Stir till golden brown. Add salt and chilly.
  4. Add the vegetables. Mix well.
  5. Add paneer. Pour the cornflour mixture, and soy sauce. Mix thoroughly. Add 1/4 cup of water. Cover and let it cook on medium flame. Stir occasionally. Turn the heat off after 10 minutes.

Cube tofu and add to a medium mixing bowl. Season with curry powder, coconut aminos, sea salt, and nutritional yeast. Shake the bowl to gently toss. Serve over your tofu "paneer" and garnish with another drizzle of full fat coconut milk and fresh cilantro. Rice makes a lovely side, as does garlic naan!
