  2. Meanwhile, peel and chop apple into half centimeter cubes. Chop the speck if not already chopped. After 10 mins, add both to the risotto. We want the apple stewed but still whole
  3. Simmer and stir for another 10 minutes. Add more stock if needed. Right at the end of cooking time, add butter and Parmesan. Stir until creamy. Serve with more Parmesan ๐Ÿ˜€๐Ÿ˜€๐Ÿ˜€

The sauteed apple has the texture of classic rice risotto. Whipped cream and rosemary sprigs complete the dish. To make the apple rings: Preheat the oven to lowest setting. Line a baking sheet with a silicone sheet. Peel the apples and cut off the tops and bottoms.
