  1. Crumble tofu finely and place them in a bowl aside
  2. Heat a Tb oil in a non stick pan and sauté the veggies for 5-7 minutes on medium-Low heat
  3. Season with salt,pepper and dry spices and mix well
  4. Add the crumbled tofu and mix well and sauté on Low heat
  5. Finish by adding coriander leaves and lemon juice
  6. Mix and take off heat
  7. Serve warm in toast/sandwiches/roles

Top with Spicy Tofu Scramble and sprinkle with your favorite micro sprouts before serving. Crumble the tofu and fry it in the vegetable oil and butter until evenly cooked. Add the turmeric, herbs, and salt and pepper to taste. Serve on crispy wholemeal toast spread with butter. This is the basic recipe. you can also add grated cheese, fried mushrooms, sweet or hot.
